Hi

This is my second posting, a kerala dish called Avial



Ingredients

1. Cut/boiled vegetables (beans, carrot, unripe plantain, yam, drumstick etc) . Take care not to boil too much, it should be just right.

2. cummin seeds + mustardseeds - 1 tsp

3. Ginger - one small piece

4. Green Chillies - 3

5. grated coconut - 1 small cup

6. Yoghurt/curd - 1 cup (whipped or beaten for
JUST 3 seconds in the mixie)

7. curry leaves for tampering

Method
1. Grind coconut, ginger, green chillies in the mixer to a fine paste

2. Heat some oil in the Kadai, add mustard and cummin seeds followed by curry leaves when the oil is heated up.

3. Add the cut/boiled vegetables and mix them all once

4. Pour the ground mixture from Step 1 above and let it heat for just one minute (not too much)

5. In the end, add the whipped curd or yoghurt, salt and a little water to make the grave a bit loose if it is too thick.

Phew!! The dish is ready. You can just add two or three drops of coconut oil on top of the dish before serving to get the flavour.
