Baby Potato Roast

My first post is a recipe called Baby Potato Roast. This is my favorite and it is very easy to make.




Ingredients

1. Baby potatoes - 250 gms(boiled just enough, not too much)

2. Chilly powder - 1 to 2 tea spoons (depends on how hot you want)

3. Sambar powder - 1 teaspoon.

4. Turmeric powder - 1/4 teaspoon

5. Oil - 3 tbsp

6. Curry leaves and Jeera for tampering...

7. Salt

Method:-

- Heat 1 tbsp oil in a wok and add the cummin seeds and curry leaves for tampering...

- Add the boiled potatoes and keep tossing to coat the 1 tbsp oil on all of them, add turmeric and salt and simmer in low flame for it to get a little brown or lightly roasted.

- Thereafter, add the chilly, sambar powders by sprinkling them evenly and mix all together slightly so that they are evenly coated.

- Add one to two more tablespoons of oil, simmer and close the wok with a lid.

After about 5 minutes, the potatoes will be roasted well. It is important to drain the oil before serving, this can be done using the oil draining paper that you get in the supermarkets.

This was our afternoon's sidedish for Avial today and my husband and me relished it. Hope you enjoy cooking this recipe.
