Ladies finger - Potato fry (Aloo-Bindi)

Both ladies finger and potato are my favourite veggies. I cook them atleast 4 times a week. This dish is something I wanted to try as a combo and it turned out so good. Hope you enjoy this dish.
Steps to follow

 1. Cut and cook potato separately, don't make it mushy. Just right consistency, so that when we fry together with ladiesfinger, it does not crumble.

 2. In a kadai, add 1.5 tbp of oil and fry jeera and curry leaves. Once the jeera splutters, add the ladies finger (cut into inch long pieces) and fry it closed. Keep stirring now and then, the steam will cook the okra well without making it soggy.

3. Once the okra is cooked, add 2 tbsp sambar pwd, 2 tbsp chilly pwd, 1 tsp jeera pwd and salt. Keep frying till the powders blend with the bindi, leave this for 2 minutes. Add potatoes at this stage and mix again, this should allow the masalas to coat and blend with the potato as well. Close this for some time.

4. In the end, add a tsp of garam masala and a generous pinch of amchur pwd. You can crush some kasuri methi and add to get some extra flavour.

Super-delicious ladies finger-potato is ready. Can be eaten with pulao, roti or white rice with dal. It goes with everything.
