Mixed Vegetable Pasta

I got introduced to Pasta through my indonesian helper Yati. Initially, I was very apprehensive about trying it, but once I did, it was in my menu quite often. Below is a non-spicy version, that even kids will love. As you can see in the picture below, I have added lots of veggies and cheese, so it is healthy for the kids.




Steps to making the dish

1. Add 2 tbsp olive oil to the wok and fry 3 finely chopped garlic in low flame. Olive oil is not supposed to get smoky and garlic should not become brown.

2. Once it is fried, add a cup of broccoli, thinly sliced carrot, baby corn and any other vegetable of your choice and fry. While it retains its crispness, add two big tomatoes sliced and one tomato paste and wait for to get mushy.

3. Add "Prego -  Traditional" sauce about 1/2 cup and 4 tbsp chilly sauce and 4 tbsp ketchup or tomato sauce.

4. Finally add the pasta and mix them altogether.

5. When it is time to serve, add about 3/4 cup of cheddar cheese on top and re-heat it till the cheese dissolves a bit and serve immediately. Adjust the cheese as per your taste.
