Vegetable Hakka Noodles
 
I used to like the white looking noodles with lots of yummy vegetables in it whenever we ordered in the hotels. but didn't realise that it would be such an easy recipe. When I started making it at home, our friends relished it, so here is the recipe, tried and tested.
 
Ingredients
 
1. One packet noodles (I used the organic thin variety, personally don't like the thick one for this)
 
2. Crushed or finely chopped garlic - 7 big pods (more the merrier)
 
3. vegetables cut into long strips (include spring onions to garnish)
 
4. Olive oil - 3 to 4 tbsps
 
salt as needed
 
Method:
 
- Boil 3 cups of water and then add the noodles (broken). After 3 minutes, use the drainer and drain all the water. You can wash the noodle with cold water at this stage to remove any stickiness.
 
 
 
 
In a big wok, fry the garlic in olive oil till nice aroma comes. Then add all the vegetables and give it a stir-fry, can add salt as required.


 Just before eating mix both together and heat it in the wok, add salt if needed. Sprinkle some blank pepper or white pepper powder on top to finish the dish. Yummy noodles ready to serve!!! Please serve this piping hot.
 

 
 
Variation:
       Add light soya sauce if needed, remember that soya sauce has salt in it.
                             
                             If you like adding eggs, just fry the eggs and add on top to avoid egg smell spoiling the noodles.
Can add chopped green or red (ripe) chillies to make it more spicy.
