Cucumber Rice

This recipe - Cucumber Rice has become one of the regular items in our menu. It is so tasty that kids keeps wanting for more.




Ingredients and Method

Wash and soak 1 basmati rice. Add 1.5 cups water in pressure cooker. Cool it.

Add 1-2 tbsp Coconut oil and mix the rice.

In a tbsp oil, For tadka add mustard seeds, jeera, curry leaves and broken cashew nuts. (Add green chillies if you need a bit of spice) Fry till cashews turn brown. Switch off the stove. Then, add very small sized chopped cucumber (1 big). Mix well. Add 5-6 tbsp coconut finely grated.(no need to fry for long) and mix salt.

Next, add rice and mix well.Garnish with coriander leaves (finely chopped).

That's it, cucumber rice is done!!!

This is a tested recipe and is sure to keep you satisfied. It is very light on your stomach unlike Briyani and Pulao. Also, easy to make for guests when you run short of time as it doesn't involve cutting onions, ginger garlic or even vegetables. Try N post your comments. Will be happy to hear from you.
