Methi rice is so flavourful, more than what I expected. My helper did it once and I stuck to the recipe ever since.
Method
Soak 1 cup basmati rice for one hour, cook in the pressure cooker with 1.5 cups water.
In 2 tbsp oil or ghee, fry 1 onion long thinly sliced and 2 tbsp ginger garlic paste, 2 green chillies, chopped methi leaves (1 bunch) and fry nicely till it becomes dark green and shrunk
Add salt and cooked rice and mix well. Add broken and slighly fried cashew nuts.
This rice gives out a nice aroma, Enjoy!!!
