Coconut Milk Pulao

Coconut milk pulao (according my DH, it is called Kudumba sadam, as I prepare that everytime there are guests :)

Method:

In a pressure pan or pressure cooker, add 2 tbsp of oil (can add 1 tbsp ghee if you don't mind the fat) and fry whole garam masala like cinnamon, cloves bay leaf etc and a handful of mint leaves.

Then, add 2 thiny sliced onions, 1 to 2 green chillies (slit), 2 tbsp ginger garlic paste and fry till the raw smell goes.

At this stage add 1.5 cups of basmati rice (pre-soaked for 30 minutes) and fry along with the above. After 2 minutes add 3 tbsp of peas.

In the end, add 1 cup of coconut milk and 1/2 cup of water mixed with required salt.

Ps note that the ratio of rice to water +  coconut milk is 1:1. If you have not pre-soaked the rice, you will not get the rice to be soft in the end and you need to increase you ratio of rice to water to 1: 1.5.

After you add the coconut milk and water, you can immediately pressure cook the pulao to one whistle. Garnish with fried cashews and coriander leaves.

I normally leave the rice to soak in the coconut milk for 15 minutes in the last stage before pressure cooking the pulao. This gives a very good taste as the coconut milk can seep into the rice and make it tasting rich.
